Introduction

Introduction

Charité Action Directe is a remarkable organization begun nearly 10 years ago with the " adoption" of two children in a Sokodé neighborhood by paying their school expenses and helping with their school work. Two years later, a formal organization, eventually called Charité Action Directe (C.A.D.), was created to help local needy children overcome the difficulties of succeeding in school. The founder later explained that he and many of his friends had been helped through school or in their businesses by others, and that the best way to return this favor would be to in turn help local children living in the same poverty in which he and his friends once lived. ABODJI Koriko, as General Secretary of C.A.D., has overseen its establishment and operation in Sokodé with the help of a board of directors. Others have been working in Europe, and raising much of the money needed to operate C.A.D. There are many individuals who volunteer their time and money to C.A.D.

Briefly, C.A.D. identifies students in dire need and helps them with school fees, school supplies, a uniform, tutoring, or food, depending on their situation. The child's teacher must certify that the student is making a serious effort to learn and a home interview verifies that the student's family is financially unable to provide for basic school needs. Students who meet these requirements are accepted into C.A.D., as funds allow, and appropriate help is provided. Is their program effective? Recently C.A.D. celebrated this year's success: 32 of their 36 charges graduated to the next class, not an easy task in Togo. These are 36 children who would not have attended school without C.A.D.'s intervention! Are the funds efficiently spent? 86% of their money is spent on school, food, and medicine expenses for the kids. There are no paid employees. All of C.A.D.'s help is provided by volunteers.

This first edition of Les Recettes Culinaires dans les Regions du Togo provides over 60 basic recipes for sauces, pâtes, beignets, bouillies, and more. Those of you who have lived in Togo will understand why these recipes are imprecise: coooking is done over a fire, with no measuring cups and spoons or timers. Also, some ingredients, such as baobab leaves, may be hard to find in your local supermarket. We've left out recipes for agouti and other animals that many of us will only find at the local zoo. So some experimentation will be needed to figure out exact quantities and cooking times for your tastes. Future editions will contain quantities, substitutes for hard to find ingredients, an English translation, or other enhancements. I welcome any suggestions, additional recipes, substitutes, requests, large book orders, sources for hard to find ingredients, or other help that any of you might be able to provide.

All proceeds from this cookbook go to C.A.D. Please help keep their dream alive with direct contributions (see Appendix 2) and purchases of this book. And Bon Appetit!

It is difficult and costly for C.A.D. to cash checks written on US banks. I've teamed up with a local non-profit organization to help fund CAD activities. Tax deductible contributions to C.A.D. can be made by sending a check made out to Sacramento Valley RPCVs to:
